WINEMAKING COMMENTS
The well drained gravel slopes of the Optimiste vineyards give this late ripening grape variety the very best chance of ripening slowly and evenly, softening out the tannins and filling out the palate.
COLOUR
Deep dark cherry colour.
AROMA
Fragrant aromas of violets, blueberries and blackberries combine with savoury aromas of black olives and dark chocolate.
FLAVOUR
The palate is rich and intense with berry fruit flavours supported by firm, ripe tannins. CELLARING This wine will reward cellaring for a further 3-5 years.
FOOD
This wine needs strongly flavoured red meat. Pan seared venison fillet with roasted root vegetables would work perfectly
