WINEMAKING COMMENTS
The well drained gravel slopes of the Optimiste vineyards give this late ripening grape variety the very best chance of ripening slowly and evenly, softening out the tannins and filling out the palate.
COLOUR
Dark ruby red
AROMA
Lifted, floral violets and red berry aromas.
FLAVOUR
Fuller bodied wine, with tannin backbone. There darker berry flavours with a savouriness and olive flavour. Some grippiness on the finish.
Cellaring
A pleasant varietal Petit Verdot which should cellar of the medium term.
FOOD
Delicious with slow cooked lamb, peas and persian fetta.
